Pimento Cheese

4 ounces cream cheese, room temperature
1 cup grated sharp cheddar
1 cup grated Monterey Jack
1/2 cup mayonnaise
4 tablespoons pimentos, smashed
1 tablespoon chopped green onion
1/2 teaspoon dried oregano
Cracked black pepper

Using an electric mixer, beat cream cheese until smooth and fluffy. Add all of the remaining ingredients and beat until well blended.

This spread can be used as a dip for veggies, on crackers, or as a sandwich filling.

It's good as an appetizer with wine. It's even better as a late-night snack.
